The benefits of beet juice or beetroot juice, are profound. It is best known as a blood purifier and helps to replenish the body’s red blood cells, but is also known to be associated with reducing high blood pressure, cleansing the liver and kidneys, and increasing the presence of cancer destroying cells in the colon.

Beet juice is very rich in vitamins and minerals and there is definitely a rather distinct “earthy” taste to it. The greens can be juiced too to add an even greater health dimension.  If you're new to beets, try a more fruit based juice first to help you adjust.  Look for notes in each recipe.

The colour of the beetroot takes over any other juice and it has a wonderful rich deep red tone.  The flavour of beet juice has a very deep earthy flavour so the addition of a sweet fruit makes it more palletable, ie carrot or apple.

Preparation: Top and tail, scrub them well and cut to fit your juicer
